Mexico's Taco Source, and the Sauces!
Mexico is known for its delicious tacos, which can be found in every corner of the country. From the classic carne asada tacos in Oaxaca to the shrimp and pineapple tacos in Cancun, there is truly something for everyone when it comes to these mouthwatering dishes.

But what really makes Mexican tacos so special is the variety of fillings that can be used. From traditional beef, pork, and chicken to more unusual options like goat, lamb, and even frog, there are truly no limits when it comes to what you can put in a taco.

Of course, not all tacos are created equal. Some regions of Mexico are known for their particularly delicious or unique tacos. For example, the coastal city of Tijuana is famous for its al pastor tacos, which are made with marinated pork that has been slow-roasted on a spit. These tacos are typically served with fresh cilantro, diced onions, and pineapple, and are considered one of the best tacos in the entire country.

In the capital city of Mexico City, you can find some of the most unique and delicious tacos in the world. One of my personal favorites is the "taco al pastor," which is a type of street food that is made by roasting pork on a spit and then slicing it thin and serving it on a corn tortilla. These tacos are typically served with pineapple, cilantro, and onions.
In the southern part of Mexico, you can find some of the most flavorful and authentic tacos in the country. One of my favorites is the "taco de carne asada," which is made with grilled steak that has been marinated in spices and served on a corn tortilla. These tacos are typically topped with fresh cilantro, diced onions, and lime wedges, and are a staple of Mexican cuisine.
Of course, no discussion of Mexican tacos would be complete without mentioning the "taco de camarones," which is made with shrimp that have been sautéed in garlic and spices and served on a corn tortilla. Ingredients:
- 500 grams (about 1 pound) of shrimp, peeled and deveined
- 1 cup of Oaxaca cheese or mozzarella cheese, shredded
- 1 red bell pepper, chopped
- 1 red onion, chopped
- 2 garlic cloves, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
- Corn tortillas
- Lime and cilantro for serving
Instructions:
- Prepare the shrimp: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
- Cook the vegetables: Add the chopped onion and bell pepper to the skillet and cook until they are tender.
- Add the shrimp: Add the shrimp to the skillet and cook until they turn pink and are fully cooked, about 3-4 minutes. Season with salt and pepper to taste.
- Add the cheese: Sprinkle the shredded cheese over the shrimp and vegetable mixture in the skillet. Cook until the cheese melts.
- Heat the tortillas: Warm the corn tortillas in a separate skillet or in the microwave.
- Assemble the tacos: Fill each tortilla with the shrimp and cheese mixture. Serve with lime and cilantro.

I could go on and on about the different types of tacos that can be found in Mexico, but the truth is, there is simply no better way to experience these delicious dishes than by visiting the country yourself.
